Tostada with Chorizo Recipe

Tostada literally means "toasted" in Spanish. Corn tortillas are toasted or deep fat fried and then served with various toppings to make these. Tostadas are typically served as appetizers, but these are hearty enough to be a main course.

We were inspired to create this tostada (link) by a lovely woman who was giving out free food samples at the local HEB grocery store in Alamo, TX. She was serving Beef Chorizo (link) mixed with refried beans and was serving them on tortilla (link) chips.

Ingredients:
8 - 10 6 inch fresh corn tortillas.
1 lb fresh Chorizo Sausage (we use beef, but pork chorizo is also available)
canned refried beans - about 1/2 cup (or you can make your own)
shredded cheddar cheese as a topping.
pico de gallo as a topping (see our recipe for pico de gallo here)
(optional) shredded lettuce as a topping.


Preparation
Fry the chorizo until done. Mix in the refried beans.
Fry the corn tortillas until lightly browned. We use vegetable oil, but you could use lard. We suspect this is why you see 5-gallon pails of lard in the grocery stores here in South Texas. Place them on paper towels when fried.

Spread the chorizo/bean mixture on a tostada and top with pico de gallo, shredded cheese, and lettuce. Enjoy!

We found that a pound of chorizo makes 8 to 10 tostadas. It depends on how much you spread on the tortilla, of course.
