A Recipe for Mexican Praline Candy or Nogada. A wonderful candy you can make quite easily.

This praline candy is made with a Mexican Sugar called piloncillo. It is brown sugar and corn syrup that is formed into cone-shaped pieces in a mold. The old molds were made of wood, and you occasionally find them in antique shops. They make very nice candle holders. In the Rio Grande Valley we find this sugar in every supermarket - in other parts of the country you may have to look at a specialty store.

Ingredients:
2 - 7 ounce Piloncillos
1 Cup Water
3 Tbsp Butter
1 tsp Vanilla
1 small (3 inch) cinnamon stick
1 Lb. Pecans - halves or pieces
a pinch of salt


Place water, salt, and piloncillos in water and heat over low heat until sugar dissolves. Add the cinnamon stick and increase heat and boil until mixture forms a soft ball when dropped into cold water (236 degrees). Remove from the heat, remove the cinnamon stick, add the butter and vanilla. Beat by hand until the candy starts to thicken. Mix in the pecans and mix until the candy starts to sugar. Immediately drop onto a buttered cookie sheet about a tablespoon at a time, or like we did, place them on a buttered cookie sheet - okay these are cake pans - we don't have any cookie sheets because we have nothing they fit into for baking. Cool, cut up into desired sizes, wrap in plastic wrap, and enjoy!
