Southwest Black Bean Dip - We've also heard it called "Texas Caviar".

This is a simple and tasty recipe forserving with chips..
Ingredients:
3/4 C. Cider Vinegar
1/2 C. Vegetable Oil
1 C. Sugar
1/2 tsp black pepper
1 Can each (drained and rinsed) of:
Pinto Beans
Black Beans
Black-eyed Peas
Shoepeg Whole Kernel Corn
1 Cup each (chopped) of:
Celery
Green Pepper
Sweet Red Pepper
Sweet Onion.
Instructions. Stir and bring the first four ingredients to a boil in a saucepan. Set aside to cool as you prepare the remaining ingresients. When the liquids are cool, add the remaining ingredients and mix together.
This makes quite a bit of dip. On suggestion is to divide the batch in half and spice one up by adding chopped Jalapeno peppers. You can adjust the recipe to taste. Store in the refrigerator - it gets better if the recipe is prepared a day before use.
