Traditional Spritz Cookies - From Mom's Recipe Box
1 Cup Soft Butter
2/3 Cup Sugar
3 egg yolks
2 1/2 Cups flour
1 tsp. Almond extract
Cream the butter, eggs, sugar, and almond extract together. Stir in the flour.
Press onto ungreased cookie sheet. Decorate if desired. Bake at 375 - 400 degrees
F. for about 8 minutes, The edges should just begin to brown.
Spritz Cookies - The National Cookie Maker's version
3/4 Cup Butter (or shortening)
1/2 cup sugar
1 egg yolk
1/4 tsp. salt
1/2 tsp. Orange Extract
1 tsp grated orange rind.
2 to 2 1/2 cups flour
Cream the butter and sugar, beat in the egg yolk, then the extract and grated
rind. sift salt with flour and add. Put through cookie maker onto cookie sheet
or pan. Bake 8 - 10 minutes at 425 degrees F.
For chocolate Spritz, add 5 Tbsp. cocoa and use whole egg.
Spritz Cookies - Wearever Cookie Gun and Pastry Decorator version.
1 Cup Shortening
3/4 Cup sugar
1 egg
1 tsp. lemon extract
1 1/4 cups sifted all purpose flour
1/4 tsp. salt
1/2 tsp. baking powder
Cream shortening until soft. Add sugar gradually, continuing to cream until
light and fluffy. Add the egg and lemon extract; beat. Sift flour, salt baking
powder together; add in three additions, beat well after each addition. Chill
dough for 10 minutes. Pack into Wearever Cookie Gun; make into desired shapes
on un-greased Wearever cookie sheet. Bake 8 - 10 minutes in hot oven, 400 degrees
F.
Yield: 7 dozen when cookie gun dial is set between thin and medium.
