Velvet Crumb Cake

Makes 8 servings



Cake:
1 1/2 cups Bisquick Reduced Fat baking mix
1/2 cup granulated sugar
1/2 cup milk or water
2 tablespoons Shortening
1 teaspoon vanilla
1 egg
Topping:
1/2 cup flaked coconut
1/3 cup packed brown sugar
1/4 cup chopped nuts
2 tablespoons margarine or butter, softened
2 tablespoons milk

Heat oven to 350. Grease and flour 8-inch round pan.

Beat all ingredients except topping in large bowl on low speed 30  seconds, scraping bowl constantly. Beat on medium speed 4 minutes,  scraping bowl occasionally. Pour into pan.  Bake 30 to 35 minutes or until toothpick inserted in center comes  out  clean; cool slightly.

Prepare topping; spread over cake.

Set oven control to Broil. Broil about 3 inches from heat about 3  minutes or until golden brown.
