Easy Key Lime Pie

You just could not find an easier recipe for key lime pie. The biggest issue is squeezing the limes - they are tiny little buggers! We understand that bottled juice is available. You can also substitute a blend of lime and lemon juice - try 3 parts lime and 1 part lemon to make up the 1/2 cup of juice called for in the recipe.


Ingredients
4 egg yolks
1 - 14 ounce can sweetened condensed milk.
1/2 cup fresh key lime juice.
2 tsp grated lime zest (green part only).
1 - 9 inch graham cracker crust (purchased or home made - your choice).

Optional - a drop or two of green food coloring - the natural color of the pie is not green.


Preparation

Preheat oven to 350 degrees.

Beat the egg yolks until light yellow in color. Continue mixing and add the condensed milk, then the lime juice and finally the zest.

Pour into pie crust and bake for 12 to 15 minutes. Cool and refrigerate. Top with whipped cream or whipped topping before serving. Lime slice garnish is a nice touch.

Serves 6 to 8.
