Mom's Sunday Roast

Ingredients:
4 lbs. round beef (cut 2 to 3 in. thick)
1 C. flour
1 t. salt
1/2 t. pepper
2 medium onions, quartered
1 C. tomatoes
4 potato quartered
4 carrots quartered
1/2 C. shortening
Preparation:
Salt and pepper roast on both sides. Mix remainder of salt and pepper with flour.
Dredge roast on both sides in flour mixture. Melt shortening in roaster or iron
skillet. Sear roast to a medium brown on both sides to hold juices. Turn heat
down. Add water. Add onions and cook one hour. Add tomatoes, potatoes and carrots
and simmer 1 hour covered. Serves 12.
