Chicken Cacciatore Recipe

 1 cut up chicken or 4 chicken breast halves
 3 TBS oil (can be reduced if you're fat watching)
 1/2 cup chopped onion
 1/2 cup chopped green pepper
 2 (8 oz) cans tomato sauce
 1/2 cup red wine (I use Chianti)
 1 tsp salt
 1/2 tsp pepper
 2 bay leaves
 1/2 tsp thyme
 dash of garlic powder


 Saute chicken in oil until golden.  Add onion and green pepper.  Saute until veggies are soft, but not browned.  Add remaining  ingredients.  Simmer uncovered for 1 to 1.5 hours.  Remove bay  leaves before serving.
